Collection: Pork On Tap

In August of 2011, while driving to get some tacos, I heard an item on National Public Radio concerning the consumption rate of pork in the United States. They played a clip from the movie "Trading Places" (1983) that made a reference to the buying and selling of pork belly futures. Pork consumption used to drastically increase during the holidays and summer months. At the time of this broadcast there was no longer a demand to justify trading in pork belly futures because the U.S. was eating pork, specifically bacon, on a regular basis (among other reasons). The Chicago Mercantile Exchange delisted pork belly futures for trading in July of 2011.

When I arrived at the taco stand to order three Adobada (marinated pork) tacos, I was greeted by a laminated sign that read " OUT OF PORK." Not one to give up on the hunt for the desired taco, I went to another taco stand and was greeted with the same sign. I asked the owner about the sign. He said that they always sell out of the pork so he had the sign made. I went and got a slice of pizza & had a beer on tap, washed my hands and began to draw "Pork On Tap.”
